Chicken puttanesca

Origin of dish:  Italy
Type of cooking:  Oven
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients (serves 4):


1- Place chicken in baking tray and cook in oven til nearly cooked through

2- Thinly slice the onion and pan fry til soft

3- Add the tin tomatoes, handful of sun dried tomatoes and white wine. Simmer for 5 minutes

4- Add the red chilli, handful of olives and handful of capers. cook for another 2 minutes.

5- Finely chop the garlic and add to the sauce. season to desired taste.

6- If sauce is too runny add tomato puree for thickening. Pour over chicken

7- Boil pan of water and cook the tagliatelle

8- Serve the chicken on top of the bed of tagliatelle and garnish with the fresh basil.

Advice: fresh egg tagliatelle doesnt take aslong as dried pasta so watch your cooking time, it should only take 5-8 minutes at the most
