Glazed strawberry cake

Ingredients (serves 8):


Method:

To make the cake:
Wash the strawberries and remove stalks.
Mix in sweetener.
Add fromage frais.
Put the meringues in a plastic bag and crush with your hand. Add to the strawberry mixture and mix well.
Cover a cake tin with cling film to make it easier to remove.
Fill with the strawberry mixture and freeze for 5-6 hours.

Topping:
Wash the strawberries and remove stalks.
Cut into pieces and pour into a bowl. Add the sweetener, lemon juice and pepper and leave to marinade for 1-2 hours in the fridge.

Remove the cake from the cling-film and tin and cut into slices. Add topping and mint leaves to serve.
