Kiwi and coconut cups

Origin of dish:  Turkey

Ingredients (serves 4):


Peel the kiwis and cut into thin round slices. Arrange around the sides and in the bottom of 4 ramekin dishes.

Place the gelatin sheets in a bowl of cold water to soak for 10 miinutes.

Set aside 3 tbsp coconut cream and pour into a small saucepan.

Put the fromage frais and the rest of the coconut cream into a large bowl, add the sugar and whisk hard.

Heat the coconut cream you set aside earlier and then remove from the heat. Melt the dried gelatin sheets into it.

Add to the fromage frais mixture, mix well and beat further.

Pour the mixture into the ramekin dishes, making sure the kiwi pieces stick to the sides. Refrigerate for 2 hours.

Remove from the dishes and sprinkle with grated coconut.
