Baked honey and pistachio bananas

Ingredients (serves 4):

    4 bananas
    50g honey
    2 limes
    100g pistachio nuts
    100g brown sugar

Method:

Wash the bananas in their skin and bake (on a tray if you prefer) for 12-15 minutes at 180°C.

Meanwhile, bring the honey to the boil and then add the lime juice. Leave for 2-3 minutes, then pour into a bowl and add the lightly-crushed pistachios.

Once the bananas are cooked, open and cut into two lengthways. Sprinkle with icing sugar and put them under a very hot grill for a moment so that the sugar caramelises very quickly all over.

Serve on dessert plates topped with the honey and pistachio mix.
