Lemon coq

Origin of dish:  France

Ingredients (serves 6):


Put the lemon juice and salt in a bowl. Drizzle the the chickens or cockerels with the lemon and refrigerate for 15 minutes. Rinse and sponge them down.
Mix the ginger, saffron, 2 tsp coriander and 2tsp chopped parsley in a bowl. Sprinkle over the chicken and leave for 30 minutes.
Heat the chopped onions in 2tbsp olive oil in a large pan. Add the chickens or cockerels, 250ml water, the quartered lemons, olives and the rest of the coriander and parsley. Leave to simmer for 45 minutes to 1 hours and serve soon after cooking.
