Ingredients (serves 4):Method: Preheat the oven to 210°C (Gas Mark 7).
Cut the monkfish into 3x3cm chunks.
Marinate the chunks in lime juice, olive oil and the 2 sticks of thyme.
Add salt and pepper then leave to marinate for 30 minutes.
Place the chunks of marinated monkfish in a roasting dish.
Drizzle with the marinade and leave to cook for 15 minutes.
Reduce the white wine and chopped shallots.
Add the cream and bring to the boil.
Add salt, pepper and a dash of lime.
