Ingredients (serves 4):Method: Carefully break the crab claws, conserving the underneath shell.
Place the claws in a gratin dish.
In a saucepan, mix the egg yolks with the cream and water, make into a mousse on a low heat, using a whisk.
Add salt, pepper and chopped coriander.
Top the crab claws with this preparation and sprinkle on grated parmesan.
Place under the grill for 5 to 8 minutes.
Serve with roquette salad.
