Carrot & coriander soup

Ingredients (serves 4):


Chop carrots and celery into chunks. Fry onions in the butter, add the celery and leave to simmer for a few minutes. Add a pint of full-cream milk, coriander and carrots and simmer for 20-30 minutes. Whizz in food processor, check consistency and season to taste.
Advice: Add a swirl of cream or yoghurt if desired. Also works well with ginger.
