Cherry gratin

Origin of dish:  Europe
Type of cooking:  Oven
 
Preparation time: 10 minutes
Cooking time: 30 minutes
 
Ingredients (serves 6):

    - 500g cherries, pitted
    - 3 tablespoons sugar
    - 3 eggs
    - 3 tablespoons flour
    - 400ml warm milk
    - 1 pinch salt
    - 1 teaspoon baking powder
    - a little butter for the dish

Method:

Preheat the oven to 220°C (Gas Mark 7).

With a whisk, mix together the sugar and eggs.

Add the sifted flour, pinch of salt and baking powder, then the warm milk.
Add the cherries and pour the whole mixture into a buttered dish.

Bake in the oven for about 30 minutes.

Sprinkle with a little powdered sugar once it has cooled.
Advice: Very nice served warm. I pit the cherries but not pitting them provides more flavour.
