Spicy vegetable relish

Origin of dish:  Exotic
Type of cooking:  Hob
Preparation time: 60 minutes
Cooking time: 10 minutes
Ingredients (serves 4):


Wash the vegetables.

Cut the carrots, cucumber and green beans into short, thin strips.

Cut the cauliflower into little bouquets.

Chop the onions.

Crush the salt, garlic, ginger and pepper together.

Heat 1/2 tablespoon of oil in a pan, brown the vegetables just until tender.
Put aside on a plate.

Heat a tablespoon of oil.
Brown the onions for one minute.
Add the crushed mixture while mixing constantly.
Add the saffron, mix well.

Mix all your vegetables together while adding in the vinegar...
it's ready!
Advice: Typical dish from the French Caribbean. This plate can be eaten cold as an hors d'oeuvre or hot served with a sandwich. This dish keeps very well for many days.

Goes well with a good red wine (Syrah, Côtes du Rhone).
