Sauce for fruit salad

Origin of dish:  UK
Type of cooking:  Hob
 
Preparation time: 10 minutes
Cooking time: 20 minutes
 
Ingredients (serves 4):

    20 fluid ounces water
    4 ounces caster sugar

Method:

1-Put water and sugar in a heavy base pan and place on hob on high heat.

2-Stir until sugar dissolves then reduce heat and simmer until liquor has reduced by a half. Give the odd stir and do not allow the syrup to colour.

3-Remove from heat and allow to cool and your sauce is ready for use.
Advice: Depending upon the fruit mixture used, the syrup is best used in quantities to cover the prepared fruit. Fresh is best but avoid using juice from tins if you use any tinned fruit.

You can add kirsch or maraschino but a good syrup combined with natural juices from the prepared fruit gives a better flavour and lasts longer.
