Strawberry sorbet

Ingredients (serves 6):

    2kg strawberries
    450g brown sugar
    Juice of half a lemon
    Fresh mint leaves


This recipe requires three hours' chilling time.

Wash and strain strawberries, then blend and press through a sieve until you have a smooth juice.

Add sugar, stir until all sugar has dissolved, then add lemon juice.

Pour into a cake tin or tupperware box, then leave in the coldest part of the freezer for three hours.

Serve sprinkled with fresh mint leaves.

This dessert will keep for several months in the freezer.
Advice: Leave in the fridge to soften for half an hour or so before serving. The longer you keep it, the longer you will need to soften it for.

Great with a glass of champagne!
