Ingredients (serves 4):Method: Preheat the oven to 325°F.
Put 2/3 of the sorrel in a bowl.
Add crème fraiche and salt to taste.
Lay pastry sheets on greased pie plate and brush lightly with melted butter.
On each pastry sheet place a salmon fillet, cover with smoked salmon and top with cream mixture.
Close the dough with 2 toothpicks.
Cover with foil and bake for 20-30 minutes.
Serve with a lemon butter sauce and the remaining sorrel.
