Flambéed honey and walnut pancakes

Ingredients (
serves 4
):
100g
flour
10g butter
250ml
milk
1
egg
50ml
rum
1 pinch of salt
100g
honey
20
walnuts
Method:
Whip the
eggs
with the
flour
and melted butter then add the
milk
and 10ml of
rum
gradually to avoid lumps.
Grind 5
walnuts
into powder and add them to the mixture then cook the
pancakes
.
Keep them warm by placing them between 2 plates on top of a saucepan of boiling water.
Heat the
honey
and add the rest of the
walnuts
.
Heat the rest of the
rum
.
Fold the
pancakes
into 4 and place them on the serving plate, cover with
honey
and
walnuts
, then flambé with the hot
rum
.
