Filo pastry wrapped scampi

Ingredients (serves 6):

    24 large scampi
    12 sheets of filo pastry
    1 bunch of basil
    Salt, pepper
    Olive oil


Shell the scampi tails. Add salt and pepper.

Pluck out 24 leaves from the bunch of basil.

Cut each of the filo pastry sheets into two semi-circles. On each semi-circle, place 1 scampi and 1 basil leaf.

Wrap the pastry around the scampi and basil, and hold in place with a cocktail stick.

Heat up a bit of olive oil in a frying pan over a high heat and brown the pastry-wrapped scampi for 3 to 5 minutes until they're golden.

Serve with a yoghurt/lemon/herb sauce or a yoghurt/lemon/pesto sauce.
