Ingredients (serves 4):Method: Wash one grapefruit and remove the outer peel. Peel and supreme (segment into quarters) the other grapefruits. Cut the salmon into thin strips and put to one side.
Peel and grate the ginger. Peel and cut the red onion then sauté with the ginger and a dash of olive oil in a saucepan. Add the grapefruit segments, zest, honey, wine vinegar, salt and pepper, and leave to cook over a low heat for 20 minutes. Leave this chutney to cool at room temperature for 30 minutes.
Peel and dice the avocados. Place the avocado at the bottom of a verrine. Add the chutney and decorate with strips of smoked salmon and sprigs of chive.
