Moelleux au chocolat with spices

Ingredients (serves 4):


Preheat the oven to 180°C (Gas Mark 6).

Melt the chocolate and butter in a bain-marie. Take off the heat, add the sugar then the egg yolks. Add the flour, baking powder, pepper and piment d'Espelette and mix well.

Beat the egg whites until stiff and gradually mix in to the previous mixture.

Pour into a buttered and floured high-sided cake tin and put in the oven for 25 to 30 minutes.
Leave to cool before removing from the cake tin.
