Ingredients (serves 10):For the mixture:
- 100g sugar
- 150g flour
- 75g cooking chocolate
- 100ml milk
- 100g butter
- 1 egg
- 2 teaspoons baking powder
- 1 vanilla pod
- 8g vanilla-flavoured sugar
- 50g chocolate chunks
For the icing:
- 225g cream cheese
- 60g soft butter
- 190g icing sugar
- 1 teaspoon vanilla extract powder
- Food colourings
- Anything you like for decorating (chocolate chunks, etc.) Method: In a small saucepan, heat up the milk and vanilla pod then add the butter. Next, add the cooking chocolate. Once it has melted and the mixture is smooth, leave it to cool a little.
In a bowl, mix the flour, baking powder, sugar and vanilla-flavoured sugar. Then pour in the egg and the milk, butter, chocolate and vanilla mixture. Mix all together.
Add the chocolate chunks to the mixture then pour into moulds and paper cases.
Put in the oven at 220°C (Gas Mark 7-8) for 20 minutes. Leave to cool before taking out of moulds.
Icing:
Whip the cream cheese to soften it. Add the soft butter (not melted though else this will ruin the icing), then the vanilla. Finally, add the icing sugar until the mixture tastes sugary.
Remove the cakes from the moulds and decorate with the icing and your choice of decoration.
