Ingredients (serves 6):Method: Preheat the oven to 180°C (Gas Mark 6). In a bowl, mix together the flour, cocoa, sugar and baking powder. In a separate bowl, mix together the milk, egg and vanilla.
Make a well in the powder and pour in the milk, egg and vanilla mixture. Add the melted butter and stir gently.
Pour into silicone moulds, filling 3/4 full then cook for 20 minutes at 180°C (Gas Mark 6).
Remove from moulds and leave to cool.
Meanwhile, whisk the egg whites with a pinch of salt until stiff and mix in the chocolate powder.
Carefully place this mousse on your cupcakes, using a small spoon or a piping bag.
Serve within 30 minutes.
