Ingredients (serves 4):Method: In a bowl, mix together the sugar, cocoa powder, cornflour and salt.
Beat the eggs and yolks in a bowl. Add them to the sugar mixture.
Heat the milk without letting it boil. Remove from heat quickly.
Pour 125ml of milk into the egg mixture, whisking constantly. Pour this mixture into the remaining milk.
Put the pan back on the heat and leave to heat for 6 minutes.
Remove from heat and add the chocolate, broken into pieces, 60g of crushed almonds, butter, coffee and vanilla. Mix together.
Pour the cream into small serving dishes or a bowl. Leave to cool then place in the fridge for at least 1 hour.
Once set, sprinkle with the remaining crushed almonds.
