Chocolate pecan cake

Origin of dish:  Europe

Cooking time: 30 minutes
Ingredients (serves 6):

    For the cake:
    - 100g dark chocolate
    - 150g butter + additional for the tin
    - 3 eggs
    - 250g caster sugar
    - 8g vanilla-flavoured sugar
    - 100g sifted flour
    - 100g shelled pecan nuts

    For the icing:
    - 100g dark chocolate
    - 50g butter
    - 2 tablespoons double cream

    For the decoration:
    - large flakes of chocolate


For the cake:

Preheat oven to 150°C (Gas Mark 5).

Using a food processor, crush the chocolate to obtain small chunks. In a saucepan in a bain-marie, melt the chocolate chunks with the butter. Mix until smooth.

Leave to cool for a few minutes, then add the caster sugar, eggs, vanilla-flavoured sugar and sifted flour.

Chop the pecan nuts into large pieces and add them to the mixture.

Pour the mixture into a greased cake tin. Bake for 30 minutes.

For the icing:

Melt the butter and chocolate in a bain-marie. Remove from the heat and add the cream.

Once the cake has cooled, carefully glaze it with the icing, covering it evenly.

Decorate the cake with large flakes of chocolate or whole pecan nuts.
Advice: To easily obtain a smooth mixture, use a metal whisk instead of a wooden spoon. It's possible to prepare this cake the night before. If you do so, store it in aluminium foil and add the icing at the last minute.
