Heart healthy scotch pancakes

    110g (4oz) self raising flour
    25g (1oz) Benecol® Buttery Spread, chilled
    1 tbsp caster sugar
    1 egg
    150ml (5floz) skimmed milk
    Benecol® Buttery spread and Strawberry Jam to serve


1. Sift the flour into a bowl.
2. Add the Benecol® Buttery Spread and rub it into the flour using your finger tips.
3. Once the flour resembles breadcrumbs, stir in the sugar.
4. Make a well in the middle of the flour and add the eggs.
5. Slowly stir the egg into the flour until it is too thick to mix.
6. Add a little milk and mix to a smooth batter, gradually adding more milk.
7. Heat a griddle or non-stick frying pan until hot.
8. Add tablespoonfuls of the batter (you will need to do this in batches)- don't worry if they don't stay in perfect rounds.
9. Cook the pancakes for 1-2 mins or until bubbles rise to the surface and then flip to cook the other side. Keep warm until ready to serve.

Advice: Spread with a little Benecol® Buttery spread and/or Strawberry Jam
