Ingredients (serves 4):
6 spring onions, trimmed and sliced
Method: 1. Using a saucepan, fry the spring onions in a little of the butter until softened.
Hndful of outer leaves from a crisp lettuce, roughly shredded
450g fresh peas (frozen will do)
2-3 sprigs of mint
1/2 tsp butter
Salt and pepper
2. Add the peas and lettuce, then add the sugar, and salt and pepper to taste.
3. Dot with the rest of the butter, add the sprigs of mint and cover with a lid.
4. Gently cook on a low heat for 10-15 minutes until the peas are tender.
