Origin of dish:  Greece
Type of cooking:  No cooking needed
Preparation time: 60 minutes
Cooking time: 10 minutes
Ingredients (serves 4):


1. Sprinkle the cucumber cubes with the sea salt and place in a colander.
2. Leave to drain for about an hour.
3. Stir the crushed garlic into the yoghurt, add the mint leaves and olive oil.
4. Place the cucumber into the mixture and toss so the pieces are well coated.
5. Season with a grinding of black pepper and a squeeze of lemon.

Advice: If it’s something more liquid you’re after, try using cucumbers in a blended juice. Because of their high water content, a little goes a long way, and because of their clean flavour, they always add a vital refreshing kick.
