Tomates confites (oven-dried tomatoes)

Preparation time: 20 minutes
Cooking time: 60 minutes
 
Ingredients (serves 4):

    8 small and firm tomatoes
    olive oil
    salt and pepper
    sugar

Method:

Preheat the oven to 180° (Gas Mark 6).

Wash the tomatoes, cut them in half and scoop out the seeds with a small knife.

Place the tomatoes in an ovenproof dish, pour over a dash of olive oil and add salt and pepper.

Sprinkle with sugar.

Put in the oven for 45 minutes.
Advice: The tomatoes are even better when they are prepared the day before and heated up before serving.

Brown some French stick with a bit of olive oil to obtain croutons and serve with the tomatoes. Sprinkle a few pine nuts and some basil to decorate.
