Sardine tapas

Ingredients (serves 4):


Preheat oven to 200°C (Gas Mark 7).

Roll out the puff pastry on a work surface and cut the edges to form a rectangle. Place on a non-stick baking sheet and prick with a fork. Place in the fridge to cool.

Finely cut the washed chive. Add the bacon bits to boiling water for 2 minutes and drain. Then thinly slice the onion. In a bowl, season the fromage frais with salt and pepper.

Drain the sardines and place on kitchen paper to dry. Carefully remove the bone and separate the fillets.

Take the pastry out of the fridge. Using a spoon, cover it completely with fromage frais. Sprinkle the pastry with chopped onions, bacon bits and sardine fillets.

Bake for about 15 minutes (the pastry should be crispy). Before serving, sprinkle with chive and pepper. Easy!
Advice: This tapas is also delicious with fresh sardine fillets, or for a slight variation on a theme, the bacon can be replaced with smoked ham. If you prefer you can add sun-dried tomatoes and black olives for a truly Mediterranean taste - delicioso!
