Beaufort lollies

Origin of dish:  Spain
Type of cooking:  Oven
Preparation time: 10 minutes
Cooking time: 15 minutes
Ingredients (serves 4):

    100g beaufort
    10g flour
    4 15/20cm long wooden sticks


Cut 100g of beaufort into small cubes. Mix roughly with 10g of flour.

Preheat oven to 150°C. Cover a baking tray with greaseproof paper. Place four 6cm cake circles on it and fill each one with a generous tablespoonful of the beaufort mixture. Carefully remove the rings, you should have small discs about 1/2cm thick.

Carefully insert a wooden stick into each disc and bake in the oven for 15 minutes at 150°C.

Once they've finished cooking, leave the beaufort lollies to cool before serving as an appetiser.
Advice: For an alternative presentation, stick the lollipops in a glass jar filled with polenta.
