Mini tomato and mozzarella tarts

Ingredients (serves 4):


Preheat oven to 210°C (Gas Mark 7).

Roll out the puff pastry on a smooth surface. Cut out 12 small circles. With a knife or the back of a spoon, fold back the edges of the tarts.

Spread a bit of mustard onto each circle.

Cut the tomatoes and mozzarella into small cubes and divide them out onto each tart. Add salt and pepper.

Put in the oven for about 20 minutes.
Advice: Add a few herbs before putting them in the oven for extra flavour.
