Tomato and anchovy pizza

Origin of dish:  Italy
Type of cooking:  Oven
Preparation time: 30 minutes
Cooking time: 20 minutes
Ingredients (serves 4):


Preheat the oven to 210°C (Gas Mark 7).

Add the tomatoes to boiling water for 30 seconds. Peel them and remove the seeds, then cut into quarters.

Thinly slice the onion.

Fry the tomatoes and the onion in the oil for 2 minutes then drain.

Place the pizza dough on an oven tray.

Cover the dough with the mixture, sprinkle on cheese and place the drained anchovies on the top.

Cook in the oven for 20 minutes.
