Tomato biscuits

Cooking time: 30 minutes
Ingredients (serves 6):

    1kg tomatoes
    250g sugar
    150g flour
    4 eggs
    50g butter
    flaked almonds


Cut the tomatoes in half and place on a baking tray. Leave them to crystallize in the oven for 3 hours at 100°C (Gas Mark 4). Remove the seeds and peel them after cooking.

Bring 120g of sugar and 100ml of water to the boil to make a syrup. Add the tomatoes to it.

Preheat the oven to 170°C (Gas Mark 5-6).

In a bowl, mix the flour and eggs. Add the rest of the sugar and the softened buter. Cover the base of a greased ovenproof dish with almonds.

Pour in the mixture and tomatoes and bake in the oven for 30 minutes. Just before serving, spread the syrup over the top and cut into small squares.
Advice: Keep a bit of tomato aside for decorating the biscuits before serving.
