Potato and feta bake

Cooking time: 30 minutes
Ingredients (serves 4):


1. Preheat the oven to 200oC, gas mark 6.
2. Place the potato, onion, garlic, tomatoes, oil and pine nuts (if using) on a large baking tray and mix well.
3. Bake for 25 minutes, turning once during cooking.
4. Stir in the feta and cook for a further 5 minutes until the potatoes are tender.
5. Season to taste.
6. Serve hot.
Advice: Having friends over for supper? Add 150g defrosted prawns with the feta cheese for the final 5 minutes of cooking, then serve on a bed of lightly wilted spinach
