Ingredients:4 slightly under-ripe, firm plums
1/2 small red onion, finely chopped
Handful mint leaves, finely chopped
Handful coriander leaves, finely chopped
1 small red chilli, deseeded and finely chopped
Juice of a lime
Zest of half a lime
Black pepper
Method: 1. Cut the plums in half, de-stone them and dice into small pieces.
2. Mix with the rest of the ingredients in a bowl.
3. Leave for 15 minutes before serving for the flavours to mingle and develop.
