Aubergine caviar

Ingredients (serves 6):


Cut the aubergines in half lengthways. Place them on a lightly-greased oven tray and grill (in the middle of the oven) for about 30 minutes. Turn them over halfway through cooking.

Take the aubergines out of the oven and scoop out the flesh with a small spoon. Make into a fine purée using a fork or a blender.

Whip in the oil and lemon juice to the (still-warm) purée. Add salt and pepper.

Add the crushed garlic and black olives (whole or sliced). Mix well and chill.
Advice: Try replacing the black olives with green ones. This "caviar" tastes delicious on grilled garlic bread! The perfect real caviar alternative.
