Aubergine and ginger caviar

Origin of dish:  Europe
Type of cooking:  Oven
Preparation time: 10 minutes
Cooking time: 35 minutes
Ingredients (serves 4):


Preheat the oven to 200°C (Gas Mark 6-7).

Cut the aubergines in half and bake for 30 minutes.
Put them under the grill for 5 minutes at the end of cooking.

Remove the skin and mash the flesh with the lemon juice, chili pepper, olive oil, salt and pepper.

Add freshly grated ginger or a bit of ground ginger, according to your taste.
