Cucumber stuffed with cream of salmon

Preparation time: 30 minutes
Ingredients (serves 4):


Wash and cut the cucumber in half lengthways. Remove the seeds using a teaspoon then soak in salt for 10 minutes.

Rinse under cold water then cut the halves in two so you end up with large pieces of cucumber that are ready to stuff.

Mix the cream cheese with crumbled salmon, tomato purée, paprika, salt and pepper.

Stuff the cucumber chunks with the salmon mixture then decorate with slices of olive.

Place it all in the fridge for 15 to 20 minutes before serving.
