Grilled vegetable tart

Ingredients (serves 6):


Cook the tomatoes with the onions and garlic for 15 minutes in a saucepan. Add salt and pepper then set aside.

Preheat oven to 210°C (Gas Mark 7).

Roll out the puff pastry on a baking tray, cover it with the tapenade.

Cut the grilled aubergines and peppers in half and alternate them over the base of the tart, along with the courgettes.

Sprinkle on the herbs and olive oil and bake for 25 minutes.
