Ingredients (serves 4):


Method:

Add the tomatoes to boiling water for a few seconds. Peel, remove thei seeds and crush them.

Brown the chopped onions with the hot oil in a stewpot.

Peel and cut the peeled potatoes and turnips into cubes then add to the stewpot. Add the crushed tomatoes, chopped herbs, garlic, cumin, olives, vegetable stock, salt and pepper.

Cover and cook for 25 minutes; serve hot.

Mash the olives slightly to release more flavour. Serve as a main dish or an accompaniment.
