Grilled pineapple with vanilla sauce

Cooking time: 30 minutes
Ingredients (serves 4):


Add 100ml water to the sugar and bring to the boil.
Leave boiling for 2 minutes.
Add pineapple juice and rum.
Stir well.
Leave simmering for 20 minutes.
In another pan, melt butter along with vanila seeds.
Stir the two mixtures together and cook until you have a syrup.
Add lemon juice.
Remove from heat.
Grill or barbecue pineapple rings for 5 minutes on each side.
Serve immediately with vanilla sauce.
Advice: Lightly oil the pineapple before cooking so it doesn't stick to the grill.
