Sweet and sour tomato soup

Ingredients (serves 4):


Dunk tomatoes for 10 - 15 seconds in boiling water and peel. Remove seeds and chop, put in a pan.
Stir well, the add caster sugar, salt, pepper and a little olive oil.
Slice grilled peppers, then dice.
Remove the bread crusts and break bread into small pieces.
Brown in a frying pan for a few minutes, with 3 tablespoons olive oil.
Slice gherkins lengthways and scatter over tomatoes.
Quarter onions and add to pan with peppers.
Sprinkle snipped chives over dish.
Add croutons just before serving.
