Oven-roasted fennel

Preparation time: 10 minutes
Cooking time: 30 minutes
Ingredients (serves 4):

    4 fennel bulbs
    3 tablespoons olive oil
    salt, ground pepper


Preheat the oven to 220°C (Gas Mark 7).

Cut the fennel bulbs into 4 lengthways. Brush with olive oil.

Place them in a roasting tray and roast in the oven for 20 minutes.

Lower the temperature to 180°C (Gas Mark 6), turn them over then add olive oil again.

Add salt and pepper and leave to cook for 30 minutes.

Serve hot or cold.
