Ingredients (serves 6):Method: Remove the green, leaves and roots from the celery cut in half lengthways and scrub.
Boil in salted water for 15 minutes.
Strain, blanch and refresh with cold water.
Cut into 8 - 10cm lengths.
Brown in a frying pan in a little butter, with sliced onions and carrots.
Cut the tomatoes into quarters and add to frying pan.
Leave to cook, sprinkle with flour.
Add a little vegetable or chicken stock.
Add celery, season.
Serve as a side dish to meat or fish.
