Ingredients (serves 4):Method: Remove outer leaves from chicory, wash under running water.
Slice salmon and chicory lengthways.
Sprinkle with 1 tablespoon lime juice.
Peel and grate apple.
Mix remaining lemon juice, mustard, salt and pepper in a bowl, then add olive oil and egg.
Arrange chicory on plates.
Add apple and pour on egg sauce.
Sprinkle with dill and red peppercorns.
