Chocolate and orange mousse

Ingredients (serves 4):


Method:

1. Gently melt chocolate in coffee over a low heat.
2. Add orange zest to taste.
3. Leave mixture to cool, then add egg yolks.
4. Beat egg whites until stiff, add a pinch of salt.
5. Carefully add to chocolate mixture.
6. Pour into a serving bowl or individual dishes, then chill for at least 3 hours.
Advice: Excellent with a glass of sparkling white wine!
