Clementine mousse

Type of cooking:  Oven
Preparation time: 15 minutes
Cooking time: 5 minutes
Ingredients (serves 4):


Peel clementines and remove pith.

Separate segments and put to one side in a bowl.

Zest and juice orange and lime.

Add sugar, then ginger.

Put mixture into a pan, bring to boil and leave to reduce for 5 minutes.

Pour half of syrup over clementine segments, leave to chill for an hour.

Combine other half of syrup with cream cheese, then whisk.

Beat egg whites until stiff and white. Add orange cream cheese, then chill for an hour.

Arrange mousse on plates, then top with clementine segments.

Drizzle with warm syrup.

Decorate with mint leaves and serve.
