Cardinal prawns

Origin of dish:  France
Type of cooking:  Hob
Preparation time: 15 minutes
Cooking time: 25 minutes
Ingredients (serves 4):


1. Chop garlic and shallots.
2. Saute in oil over a gentle heat.
3. Add chopped carrots and peeled, diced pepeprs.
4. Mix well, then add tomatoes and prawns.
5. Season to taste and leave to cook for 15 minutes, stirring occasionally.
6. Add white wine, reduce heat and cook for a further 5 minutes.
7. Sprinkle with parsley and chervil.
8. Serve hot.

Burgandy: St véran
Bordeaux: Graves blanc Châteaux
Loire Valley: Sancerre, Pouilly
Rhône Valley: Tavel, Maçon
Provence: Bandol
