Skate with capers

Origin of dish:  Europe
Type of cooking:  Hob
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients (serves 5):


Cook skate gently in fish stock, do not let it boil.
Remove skin and arrange on a serving plate or dish, sprinkle with salt, pepper and parsley.
Melt butter and pour over fish.
Heat vinegar gently, then pour over fish.
Sprinkle with capers and parsley.
Serve immediately.
Advice: Recommended Wines :
- Alsace : Silvaner, Pinot blanc
- Bordeaux : Entre 2 mers
- Bourgogne : Maçon, St Véran
- Loire : Sancerre, Pouilly
