Ingredients (serves 5):Method: Cook skate gently in fish stock, do not let it boil.
Remove skin and arrange on a serving plate or dish, sprinkle with salt, pepper and parsley.
Melt butter and pour over fish.
Heat vinegar gently, then pour over fish.
Sprinkle with capers and parsley.
