Cooking time for syrup: 5 minutes

Make the syrup, by boiling the sugar and water together.

Flavour with alcohol to taste, then leave to cool.

Line the bottom of a loaf or cake tin with biscuits soaked in syrup, sugar side up.

Melt chocolate in a bain-marie (bowl over boiing water).

Soak gelatine in cold water for 5 minutes, then very gently heat in a pan, stirring constantly until it has melted.

Add melted chocolate and stir well.

Beat egg yolks and (50g) sugar together in a bowl, until white.

Add softened butter and 1 tablespoon alcohol.

Beat egg whites until stiff, then pour carefully into melted chocolate.

Fill loaf tin with chocolate mixture and chill for 12 hours.

Remove carefully and serve with custard.
