Soft chocolate caramels

Type of cooking:  Hob
Preparation time: 15 minutes
Cooking time: 5 minutes
Ingredients (serves 6):


In a pan, melt the sugar, cocoa powder, honey and butter together over a medium heat, stirring with a spatula. You may find it easier to melt the sgar first, then melt the other ingredients into it.

Carry on cooking until you have the right consistency, ie, until the caramel forms a ball and is soft and sticky.

Pour mixture onto a marble slab or other cold surface at about 3cm thickness.

Once it has cooled, cut into bite-sized squares.
Advice: A great excuse for a flute of champagne...
