Origin of dish:  Exotic
Type of cooking:  Hob
Preparation time: 25 minutes
Cooking time: 10 minutes
Ingredients (serves 6):

    1kg flour
    20g baking powder
    250g honey
    Oil for frying


Sieve the flour into a bowl and make a well in the middle.
Pour baking powder into a glass of warm water.
Add salt to flour, then add baking powder. Rub and knead with fingers until you have a smooth paste.
Cover with a clean cloth and leave top rest for 3 hours.
Roll out pastry, make several long, thin sausages and arrange as shown in the picture (if it looks too complicated, then wrap round in a snail shape).
Fry each sfenj in hot oil.

Meanwhile, gently heat honey in another pan.
Once sfenj are golden, soak each one in honey for 15 minutes.
Arrange on a plate and serve cold.

Advice: Try serving warm, sprinkled with orange blossom water, or icing sugar; or adding dates, figs, raisins or peel to the dough.
Serve this popular Arab dessert with a glass of hot mint tea.
