Ingredients (serves 6):Method: Pour a little olive oil into a pan, chop the onions into round slices, brown and remove from the heat.
Remove the pith and seeds from the peppers, chop roughly, add to the pan for a few minutes then set aside.
Cube the tomatoes and add to the pan. Heat on a high temperature then set aside.
Heat a little oil in a casserole pan and cook the chicken pieces. Add the vegetables, herbs and spices and leave to simmer for 40-45 minutes. Serve with tagliatelle.
